Preparation
  1. Rinse the garlic scapes under cold water and chop them roughly into smaller pieces.
  2. In a small skillet over medium heat, toast the nuts for 3-5 minutes until fragrant, keeping an eye on them to prevent burning.
Blending
  1. In a food processor, combine the chopped garlic scapes and toasted nuts. Pulse until finely chopped.
  2. Blend in the parmesan cheese and lemon juice, processing until combined.
  3. While the food processor is running, slowly drizzle in the olive oil until the mixture reaches your desired consistency.
  4. Add salt and pepper, blending again to incorporate. Taste and adjust seasonings if necessary.
