Method
 

Preparation
  1. Wash the garlic scapes thoroughly and chop them into smaller pieces.
  2. Optional: Toast the nuts in a dry skillet over medium heat for about 3-5 minutes until fragrant.
Blending
  1. In a food processor, combine the chopped garlic scapes and toasted nuts and pulse until finely chopped.
  2. Gradually add the grated Parmesan and slowly drizzle in the olive oil, blending until smooth.
  3. Add the fresh lemon juice and seasoning with salt and pepper, then blend once more and taste to adjust seasoning.
Serving
  1. Enjoy your garlic scape pesto right away or store it in an airtight container.

Notes

Storage Tips: Store in a glass jar in the refrigerator for up to a week or freeze in ice cube trays for longer storage. For a nut-free version, use sunflower seeds. Try adding fresh herbs for variations.
