  • 1 pound pork tenderloin, thinly sliced Feel free to substitute with chicken or tofu.
  • 1 bunch garlic scapes, chopped If unavailable, green beans can be used.
  • 2 tablespoons vegetable oil
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce Optional for a richer flavor.
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Method
 

Preparation
  1. Slice the pork into thin strips and chop the garlic scapes.
Cooking
  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the pork slices, seasoned with salt and pepper. Stir-fry for about 5 minutes until browned and cooked through.
  3. Toss in the chopped garlic scapes and stir-fry for another 3-4 minutes until tender yet still vibrant.
  4. Pour in the soy sauce, oyster sauce (if using), and sesame oil. Stir everything together and allow to simmer for an additional 2 minutes.
  5. Remove from heat and serve hot, garnished with fresh cilantro.

Notes

Varieties include adding sliced chili peppers for heat or incorporating more veggies like bell peppers for texture. Leftovers can be stored for up to 3 days.
