  • 2 tablespoons rice vinegar Contributing a tangy zing.
  • 1 tablespoon brown sugar To balance soy sauce and vinegar.
  • 2 cloves garlic, minced Offering aromatic warmth.
  • 1 teaspoon fresh ginger, minced For a touch of brightness.
  • 2-3 dried red chili peppers To bring some heat.
  • Green Onions green onions For garnish and a pop of color.

Method
 

Preparation
  1. Cut the chicken thighs into bite-sized pieces and pat them dry with paper towels.
  2. Toss the chicken pieces in cornstarch until evenly coated.
Cooking
  1. Heat about 1/2 inch of vegetable oil in a large skillet or wok over medium-high heat until shimmering.
  2. Carefully add the chicken in batches, cooking until golden brown and cooked through, about 4-6 minutes per batch. Remove and place on paper towels to drain.
  3. In a separate bowl, whisk together soy sauce, rice vinegar, brown sugar, minced garlic, and ginger.
  4. In the same pan, remove excess oil, leaving about 2 tablespoons. Return the pan to medium heat and add dried red chili peppers. Sauté for about 30 seconds.
  5. Add the sauce to the pan and bring to a simmer. Add the fried chicken pieces, stirring to coat with the sauce. Cook for an additional 2-3 minutes until everything is heated through and the sauce thickens slightly.
  6. Transfer to a serving platter and garnish with chopped green onions. Serve hot.

Notes

Consider incorporating vegetables for added nutrition or bake the chicken for a healthier option. Serve best with steamed rice.
