  • 1/2 cup sour cream or Greek yogurt Choose based on taste preference.
  • 1/4 cup apple cider vinegar
  • 1 tablespoon sugar

  1. Begin by peeling the cucumbers and slicing them thinly for even marination.
  2. In a large mixing bowl, combine the sliced cucumbers, red onion, and fresh dill.
  3. In a separate bowl, whisk together the sour cream (or yogurt), apple cider vinegar, and sugar until smooth.
  4. Pour the dressing over the cucumber mixture and toss gently to combine.
  5. Season with salt and pepper to taste, adjusting as desired.
  6. Allow the salad to sit for about 10-15 minutes to let the flavors meld beautifully.

Notes

Store in an airtight container in the fridge for up to 2 days. It’s best enjoyed fresh as the cucumbers may release water. Consider mixing the dressing separately and combining it just before serving to maintain texture.
