  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
Wet Ingredients
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar, packed
  • 1/2 cup molasses
  • 1 large egg
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. In a bowl, whisk together the flour, ginger, cinnamon, nutmeg, baking soda, and salt.
  2. In another large bowl, beat the softened butter and brown sugar until light and fluffy.
  3. Stir in molasses, egg, and vanilla until well combined.
  4. Gradually add the dry ingredients to the wet mixture and mix until a dough forms.
  5. Cover the dough and refrigerate for at least 1 hour.
Baking
  1. Preheat the oven to 350°F (175°C).
  2. Roll out the dough on a lightly floured surface to about 1/4-inch thickness.
  3. Cut out gingerbread men shapes with cookie cutters and place them on a baking sheet lined with parchment paper.
  4. Bake for 8-10 minutes until firm.
  5. Allow to cool before decorating as desired.

Notes

Chill the dough thoroughly to prevent spreading and ensure neat shapes. Decorate after cookies have fully cooled to prevent icing from melting. For a deeper spice profile, add a pinch of ground cloves or allspice.
