Glaze Ingredients
  • 1/3 cup brown sugar Light or dark — dark gives richer molasses notes
  • 2 tablespoons soy sauce Or tamari for gluten-free
  • 1 tablespoon Dijon mustard Or use whole grain mustard for texture
  • 1 teaspoon apple cider vinegar Or a squeeze of lime for a fresher tang
  • 1/4 teaspoon red pepper flakes Optional — add for a subtle heat

Method
 

Preparation
  1. Heat a large skillet over medium-high heat and add the butter. When the butter foams, add the kielbasa slices in a single layer. Sear for 2–3 minutes per side until edges are golden and slightly crisp.
  2. Push the kielbasa to the side and add the pineapple chunks to the pan. Cook for 2–3 minutes until the fruit starts to caramelize.
  3. In a small bowl, whisk together the brown sugar, soy sauce, Dijon mustard, and apple cider vinegar, adding red pepper flakes if desired.
Cooking
  1. Pour the glaze into the skillet, combining the kielbasa and caramelized pineapple. Lower heat and let simmer for 3–4 minutes, stirring gently.
  2. Taste and adjust: add a pinch of salt if needed, or lime for brightness. Sprinkle with chopped parsley or green onion before serving.

Notes

For a healthier option, choose a lower-sodium kielbasa or swap brown sugar for maple syrup. For a festive treat, glaze with a touch of bourbon or rum.
