Preparation
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix the sliced peaches with half of the sugar and set aside for about 10 minutes to release their juices.
Assembling the Cobbler
- In another bowl, whisk together the gluten-free flour, baking powder, salt, and remaining sugar.
- Stir in the milk and melted butter into the dry ingredients until just combined.
- Pour the batter into a greased baking dish, then gently spoon the peaches and their juices over the top.
Baking
- Bake for 30-35 minutes or until the top is golden brown and the filling is bubbly.
- Allow to cool for a few minutes before serving warm, preferably with a scoop of ice cream on top.
Notes
Serve with ice cream or whipped cream. Store leftovers in an airtight container in the refrigerator for up to 3 days. For best results, choose ripe, sweet peaches and avoid over-mixing the batter.
