Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  2. In a large mixing bowl, combine the pumpkin puree, eggs, sugar, vegetable oil, and vanilla extract. Whisk until smooth.
  3. In another bowl, whisk together the gluten-free flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
  4. Gradually add the dry ingredients to the wet mixture, stirring gently just until combined. Be careful not to overmix.
  5. Fold in the nuts if you’re using them.
Baking
  1. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  2. Bake in the preheated oven for about 60 minutes, or until a toothpick inserted in the center comes out clean.
  3. Once baked, let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
