Method
Marinate the Chicken
- In a bowl, combine olive oil, oregano, garlic powder, salt, and pepper. Add the chicken breasts and coat them well. Let it marinate for at least 15 minutes (or a few hours if you have time).
Cook the Chicken
- Heat a grill pan over medium-high heat. Remove the chicken from the marinade and cook for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C). Remove from heat and allow to rest for a few minutes.
Slice the Chicken
- Once the chicken is cool enough to handle, slice it into thin strips.
Warm the Pita
- Briefly heat the pita or flatbreads on the grill pan for about 1 minute on each side or until warm and pliable.
Assemble the Wraps
- Lay out the warm pita on a plate. Start by adding the lettuce, followed by tomatoes, cucumber, red onion, and then the sliced chicken. Drizzle with tzatziki sauce and fold the pita to enclose the filling.
Serve
- Place the wraps on a serving platter, and enjoy them while warm!
Notes
Feel free to customize your wraps; swap spinach for kale or add feta cheese for a classic Greek touch. Leftovers can be stored in an airtight container for up to 3 days. Reheat on a grill pan for best texture.
