  • 1 lb fresh green beans, trimmed Trim green beans uniformly for even cooking.
  • 1 lb baby potatoes, halved or quartered Parboil larger potatoes for faster cooking.
  • 2 tablespoons olive oil Used for sautéing potatoes.
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika Add more for a smokier flavor if desired.

  1. In a large skillet, cook the diced bacon over medium heat until crispy.
  2. Remove bacon and set aside, leaving the drippings in the skillet.
  3. Add olive oil to the skillet and sauté the baby potatoes until golden brown and tender.
  4. Stir in the green beans and cook until they are tender and bright green.
  5. Sprinkle garlic powder and smoked paprika over the mixture, stirring well to combine.
  6. Add the crispy bacon back to the skillet and toss everything together.
  7. Serve warm as a delicious side dish.

Notes

Refrigerate in an airtight container for up to 3-4 days. Reheat gently in a skillet over medium-low heat to preserve texture.
