Ingredients
  

For the Skewers
  • 1 lb shrimp, peeled and deveined Use fresh shrimp for best flavor.
  • 1 lb scallops, cleaned
  • 1 lb firm white fish (like cod or halibut), cut into bite-sized pieces Choose your favorite firm fish.
  • 1 each red bell pepper, cut into squares
  • 1 each yellow bell pepper, cut into squares
  • 1 each zucchini, sliced Use seasonal vegetables.
For the Marinade
  • 1/4 cup olive oil
  • 3 cloves garlic, minced Fresh garlic enhances flavor.
  • 2 each lemons, juiced Fresh lemon juice adds brightness.
  • to taste salt and pepper Adjust seasoning according to preference.
  • for garnish Fresh parsley Chopped parsley for serving.

Method
 

Preparation
  1. In a bowl, whisk together olive oil, minced garlic, lemon juice, salt, and pepper. Add the shrimp, scallops, and fish to the bowl, coating well. Let it marinate for about 15 minutes.
  2. If you’re using wooden skewers, soak them in water for about 30 minutes to prevent burning. Then, alternate threading the marinated seafood and vegetables onto the skewers.
Grilling
  1. Heat your grill to medium-high. You want a nice sear on your skewers without overcooking the seafood.
  2. Place the skewers on the grill and cook for about 2-3 minutes per side, keeping an eye on them; the seafood should turn opaque and the veggies should show grill marks.
Serving
  1. Once cooked, remove the skewers from the grill. Garnish with freshly chopped parsley and serve with lemon wedges for an extra burst of flavor.
