- In a bowl, whisk together olive oil, minced garlic, lemon juice, salt, and pepper. Add the shrimp, scallops, and fish to the bowl, coating well. Let it marinate for about 15 minutes.
- If you’re using wooden skewers, soak them in water for about 30 minutes to prevent burning. Then, alternate threading the marinated seafood and vegetables onto the skewers.
Grilling
- Heat your grill to medium-high. You want a nice sear on your skewers without overcooking the seafood.
- Place the skewers on the grill and cook for about 2-3 minutes per side, keeping an eye on them; the seafood should turn opaque and the veggies should show grill marks.
Serving
- Once cooked, remove the skewers from the grill. Garnish with freshly chopped parsley and serve with lemon wedges for an extra burst of flavor.
