  • 2 tablespoons olive oil For marinating shrimp.

  • Salt and pepper to taste Season according to preference.

For the Corn Salsa
  • 1 cup corn, fresh or frozen (thawed) Can use canned corn if needed.
  • 2 ripe avocados, diced Choose ripe avocados for creaminess.
  • 1 red bell pepper red bell pepper, diced For sweetness and color.
  • 1/2 cup red onion, finely chopped Adds crunch and flavor.

Method
 

Preparation
  1. In a bowl, toss the shrimp with olive oil, lime juice, salt, pepper, and optional spices until well coated.
  2. Preheat your grill or grill pan to medium-high heat.
Cooking
  1. Place the shrimp on the grill and cook for 2-3 minutes on each side until they turn pink and slightly charred.
  2. In a separate bowl, combine corn, diced avocado, red bell pepper, red onion, lime juice, salt, and pepper to make the corn salsa.
Assembly
  1. Start with a base of grilled shrimp, then load on the corn salsa. Garnish with fresh cilantro and a little extra lime juice.
  2. Serve immediately and enjoy with a smile.
