Preparation
- In a large bowl, empty the box of vanilla cake mix.
- Add 2 eggs and 1/3 cup of vegetable oil to the mix.
- Add 1/4 teaspoon green gel food coloring and mix until a bright green dough forms.
- Cover the bowl with plastic wrap and refrigerate the dough for 30 minutes.
Baking
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone mat.
- Place granulated sugar and powdered sugar on two separate plates.
- Use a 1-inch cookie scoop to portion dough, roll into balls by hand.
- Roll each dough ball first in granulated sugar, then in powdered sugar.
- Place on the prepared baking sheet, spacing them 2 inches apart.
- Bake for 12 minutes or until edges are set and centers are soft.
- Remove from oven and immediately press a red heart sprinkle into the upper right of each cookie.
- Cool on a wire rack for 15–20 minutes before serving.
Notes
Use gel food coloring for vibrant color. Chill the dough as directed, and do not overbake for a tender texture.
