  • 1 tablespoon olive oil or neutral oil
  • 1 medium yellow onion, thinly sliced sweet onions caramelize beautifully
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika or regular paprika for milder flavor
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon red pepper flakes plus more to taste (adjust for desired heat)

  • 2 tablespoons soy sauce or tamari for depth; use coconut aminos for gluten-free
  • 2 tablespoons hot honey store-bought or homemade
  • 1 tablespoon apple cider vinegar or rice wine vinegar brightens the dish
  • 3 cups cooked rice or grains such as brown rice, quinoa, or cauliflower rice for low-carb option

Method
 

Preparation
  1. Prepare your rice or chosen grain so it is warm when the beef finishes.
  2. Heat a large skillet over medium-high heat. Add the oil.
  3. Add the sliced onion and cook until the edges turn golden and sweet, about 5–7 minutes, stirring occasionally.
  4. Add the garlic and cook for 30 seconds until fragrant.
  5. Push the onion and garlic to the side, add the ground beef, and break it up with a wooden spoon. Brown the meat for about 6–8 minutes.
  6. Season with salt, pepper, smoked paprika, cumin, and red pepper flakes.
Cooking
  1. Stir in the soy sauce, then drizzle the hot honey over the beef. Let bubble for 1–2 minutes.
  2. Add the vinegar to balance sweetness and deglaze any sticky bits from the bottom of the pan.
  3. Taste and adjust seasoning.
  4. Toss in any optional greens just until wilted, or keep them on the side.
  5. Build the bowl: a warm bed of rice, a generous scoop of hot honey ground beef, and your chosen toppings.

Notes

Ideal for busy nights; great for meal prep. Store leftovers in airtight containers. For a festive touch, add pomegranate seeds or toasted pistachios.
