  • 1 lb beef (thinly sliced, flank or sirloin work well)
  • 2 large onions (sliced)
  • ½ cup soy sauce
  • ½ cup mirin (sweet rice wine)
  • 2 tablespoons sake (optional)
  • 2 tablespoons sugar
  • cooked rice (for serving)
  • pickled ginger (for garnish)
  • chopped green onions (for garnish)

Preparation
  1. In a large skillet or wok, add a drizzle of oil and heat over medium-high heat. Once hot, toss in the sliced onions and sauté until they become tender and transparent.
  2. Add the thinly sliced beef to the skillet. As it begins to cook, continue to stir, ensuring it browns evenly. The aroma will start to fill your kitchen.
  3. In a bowl, whisk together the soy sauce, mirin, sake, and sugar. Pour this mixture over the beef and onions in the skillet.
  4. Stir everything to combine, allowing the sauce to simmer for about 5 minutes.
  5. Serve the hot beef mixture over bowls of freshly made rice, optionally topping with pickled ginger and chopped green onions.

Notes

For a healthier version, substitute some beef with vegetables like bell peppers or mushrooms. You can also add a fried egg or sesame seeds on top for special occasions. Leftovers can be stored in an airtight container for up to three days.
