  • 30 ounces 1 bag (30 ounces) frozen hashbrowns, thawed Feel free to swap with homemade hashbrowns for an extra touch.
  • 1.5 cups 1 1/2 cups shredded cheddar cheese Or your favorite cheese for a different twist.
  • 1 cup 1 cup diced cooked ham, sausage, or bacon Use leftovers for a quick meal.
  • 1 small 1 small onion, diced For a hint of sweetness.
  • 6 large 6 large eggs
  • 2 cups 2 cups milk Or a non-dairy alternative.
  • 1 teaspoon 1 teaspoon garlic powder For added depth.
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the thawed hashbrowns, half of the cheese, diced meat, and onion. Stir until well combined.
  3. In another bowl, whisk together the eggs, milk, garlic powder, salt, and pepper until well-blended.
  4. Pour the egg mixture over the hashbrown mixture and stir until everything is evenly coated.
  5. Grease a 9x13-inch baking dish and spread the hashbrown mixture evenly in the pan.
  6. Sprinkle the remaining cheese on top of the mixture.
Cooking
  1. Place the dish in the preheated oven and bake for 45 minutes, or until the top is bubbly and golden brown.
  2. Let the casserole cool for a few minutes before slicing.

Notes

This casserole can be prepared ahead of time and stored in the fridge overnight. Serve with fresh fruit or a simple salad for a well-rounded meal.
