Ingredients
  

For the filling
  • 4 medium apples, peeled, cored, and sliced any tart variety works well, like Granny Smith
For the topping
  • 1 cup rolled oats feel free to substitute with gluten-free oats for a GF option
  • ½ cup almond flour or whole wheat flour
  • ½ cup chopped nuts walnuts or pecans add delightful crunch
  • ¼ cup honey or maple syrup for natural sweetness
  • ¼ cup coconut oil, melted can swap with unsalted butter
  • 1 teaspoon ground cinnamon
  • ½ teaspoon vanilla extract
  • a pinch of salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare a baking dish by lightly greasing it.
  2. In a large bowl, toss the apple slices with ground cinnamon and a pinch of salt. Spread them evenly in the prepared baking dish.
Topping Preparation
  1. In another bowl, mix the rolled oats, almond flour, chopped nuts, and a pinch of salt.
  2. Pour in the melted coconut oil and honey or maple syrup, mixing until the dry ingredients are well-coated and crumbly.
Baking
  1. Sprinkle the oat mixture over the apples, making sure to cover them evenly.
  2. Bake for about 30 minutes, until the apples are tender and the topping is golden brown and crispy.
  3. Allow to cool slightly before serving. Enjoy it warm, perhaps with a dollop of yogurt or a scoop of vanilla ice cream.

Notes

Feel free to add dried cranberries or raisins for extra flavor, or swap some of the apples for pears for a different texture. Add a pinch of nutmeg or ginger for a bit of a kick! It can be stored in the refrigerator for up to five days.
