Preparation
  1. In a saucepan, bring water to a boil and add the shrimp. Cook for about 3-5 minutes or until they turn pink and opaque. Drain and cool under cold running water.
  2. While the shrimp cools, slice the cucumbers, dice the avocado, and chop the red onion and herbs.
  3. In a small bowl, whisk together olive oil, lemon juice, and a pinch of salt and pepper to create the dressing.
  4. In a large bowl, gently toss the shrimp, cucumbers, avocado, red onion, and herbs. Drizzle the dressing over the top and mix until everything is coated.
  5. Taste and adjust seasoning as needed, adding more lemon juice or herbs to suit your taste.
  6. For the best flavor, let the salad sit for a few minutes before serving, allowing the flavors to meld.

Notes

Store leftovers in an airtight container in the refrigerator for up to 2 days. If meal prepping, avoid adding the dressing until ready to serve.
