Preparation
- Preheat your oven to 350°F (175°C) and grease a loaf pan with a bit of cooking spray or butter.
- In a large bowl, combine the pumpkin puree, honey or maple syrup, applesauce, and vanilla extract, whisking until smooth.
- In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the pumpkin mixture, stirring gently until just combined. Avoid overmixing.
- Fold in nuts or chocolate chips if using.
- Pour the batter into the prepared loaf pan and smooth the top.
Baking
- Place it in the oven and bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
- Once baked, allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
Store leftovers wrapped in foil or in an airtight container at room temperature for up to three days. Freeze for longer storage.
