Ingredients
  

Wet Ingredients
  • 1 cup pumpkin puree (canned or homemade)
  • 1/3 cup honey or maple syrup for natural sweetness
  • 1/3 cup unsweetened applesauce a great oil substitute
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 1.5 cups whole wheat flour for a fiber boost
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon or to taste
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
Optional Add-ins
  • to taste nuts, chocolate chips, or dried fruits

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan with a bit of cooking spray or butter.
  2. In a large bowl, combine the pumpkin puree, honey or maple syrup, applesauce, and vanilla extract, whisking until smooth.
  3. In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the pumpkin mixture, stirring gently until just combined. Avoid overmixing.
  5. Fold in nuts or chocolate chips if using.
  6. Pour the batter into the prepared loaf pan and smooth the top.
Baking
  1. Place it in the oven and bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  2. Once baked, allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

Store leftovers wrapped in foil or in an airtight container at room temperature for up to three days. Freeze for longer storage.
