Ingredients
  

Wet Ingredients
  • 1 cup pumpkin puree (canned or homemade)
  • 1/3 cup honey or maple syrup for natural sweetness
  • 1/3 cup unsweetened applesauce great oil substitute
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 1.5 cups whole wheat flour for a fiber boost
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon or to taste
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
Optional Add-ins
  • nuts, chocolate chips, or dried fruits

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, combine the pumpkin puree, honey or maple syrup, applesauce, and vanilla extract, whisking until smooth.
  3. In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the pumpkin mixture and stir gently until just combined.
  5. Fold in any optional ingredients such as nuts or chocolate chips.
Baking
  1. Pour the batter into the prepared loaf pan and smooth the top.
  2. Bake for 45-50 minutes, or until a toothpick inserted comes out clean.
  3. Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack.

Notes

Store any leftovers wrapped in foil or in an airtight container at room temperature for up to three days. For longer storage, wrap tightly and freeze for up to three months. Thaw in the refrigerator before warming.
