  • 3 cups cooked rice
  • 3 cups cooked chicken, diced or shredded Rotisserie chicken can be used for convenience.
  • 1/2 cup butter, room temperature and cubed Cut into small cubes for easier mixing.
  • 8 ounces cream cheese, room temperature and cubed Let it soften at room temperature for smooth blending.
  • 1 cup Colby Jack cheese, shredded For topping before baking.

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cooked rice, diced chicken, butter, and cream cheese. Mix until well combined.
  3. Transfer the mixture to a greased casserole dish and spread evenly.
  4. Top with shredded Colby Jack cheese.
Baking
  1. Bake in the preheated oven for about 25–30 minutes, or until the cheese is melted and bubbly.
  2. Let it cool for a few minutes before serving.

Notes

Serve hot with a crisp green salad or steamed vegetables. Garnish with chopped parsley or sliced green onions for a fresh touch. Store leftovers in the refrigerator for up to 3–4 days. For longer storage, freeze portions for up to 2 months.
