  • 1/2 teaspoon baking soda
  • 1/2 teaspoon fine salt
Wet Ingredients
  • 2 large eggs, beaten
  • 1 1/2 cups plain Greek yogurt Full-fat yields richer waffles; nonfat makes a lighter healthy option
  • 1/2 cup whole milk Or almond milk for dairy-free preference
  • 4 tablespoons unsalted butter, melted Cool slightly; coconut oil works in a pinch
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your waffle iron according to manufacturer instructions and lightly grease it with butter or cooking spray.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk the eggs, Greek yogurt, milk, melted butter, and vanilla until smooth.
  4. Fold the wet ingredients into the dry until just combined; small streaks of flour are okay.
  5. Let the batter rest for 3–5 minutes.
Cooking
  1. Spoon or pour batter onto the hot waffle iron and cook until steam subsides and the waffle is golden, about 3–5 minutes.
  2. Carefully remove the waffle and transfer to a wire rack to keep crisp.
  3. Serve immediately or keep warm in a low oven.

Notes

For a gluten-free twist, substitute a 1-to-1 gluten-free flour blend and add an extra tablespoon of milk if the batter seems thick.
