Preparation
- Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.
- In a medium bowl, combine the sliced peaches, 0.5 cup of sugar, cinnamon, and lemon juice. Mix well and set aside.
- In a separate mixing bowl, whisk together the remaining sugar, flour, baking powder, and salt.
- Add the milk, melted butter, and vanilla extract to the dry mixture, stirring until just combined.
Baking
- Pour the batter into the greased baking dish, spreading it evenly across the bottom.
- Spoon the peach mixture over the batter, ensuring the peaches are evenly distributed but do not stir.
- Bake for 30-35 minutes, or until the top is golden brown and a toothpick comes out clean from the center.
- Allow it to cool for a few minutes before serving.
Notes
Serve warm, topped with vanilla ice cream or fresh whipped cream. Store leftovers covered in the refrigerator for 3-4 days.
