- Start by gathering your garlic scapes, basil, nuts, and cheese. Make sure all ingredients are fresh for the best flavor.
- In a food processor, combine the garlic scapes, basil leaves, and nuts. Pulse a few times until coarsely chopped.
- Toss in the Parmesan cheese and pulse again to combine.
- While the processor is running, slowly drizzle in the olive oil. Keep blending until everything is well combined and reaches a creamy consistency.
- Taste your pesto, adding salt and pepper as needed. If it’s too thick, feel free to add a splash of water or more olive oil.
Notes
Store in an airtight container for up to a week. A thin layer of olive oil on top can help prevent browning. For longer storage, freeze in ice cube trays and transfer to a resealable plastic bag.
