Preparation
  1. Start by gathering your garlic scapes, basil, nuts, and cheese. Make sure all ingredients are fresh for the best flavor.
  2. In a food processor, combine the garlic scapes, basil leaves, and nuts. Pulse a few times until coarsely chopped.
  3. Toss in the Parmesan cheese and pulse again to combine.
  4. While the processor is running, slowly drizzle in the olive oil. Keep blending until everything is well combined and reaches a creamy consistency.
  5. Taste your pesto, adding salt and pepper as needed. If it’s too thick, feel free to add a splash of water or more olive oil.

Notes

Store in an airtight container for up to a week. A thin layer of olive oil on top can help prevent browning. For longer storage, freeze in ice cube trays and transfer to a resealable plastic bag.
