Preparation
- Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan with cooking spray or line it with parchment paper.
- In a large mixing bowl, combine pumpkin puree, granulated sugar, brown sugar, vegetable oil, and eggs. Whisk until well blended and smooth.
- In another bowl, whisk together all-purpose flour, baking soda, baking powder, cinnamon, nutmeg, clove, and salt.
- Gradually add the dry mixture to the wet mixture, stirring until just combined. Avoid overmixing; a few lumps are fine.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
Baking
- Bake for 60 minutes or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
For variations, consider adding ½ cup of chopped walnuts or pecans for crunch or semi-sweet chocolate chips for indulgence. To store, wrap tightly in plastic or foil and keep at room temperature for up to 3 days, or freeze for up to three months.
