Preparation
- Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
- In a large bowl, whisk together the granulated sugar, brown sugar, and oil until well combined.
- Add the eggs and vanilla extract, mixing until smooth.
- Stir in the grated zucchini, ensuring it’s evenly distributed.
- In a separate bowl, sift together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- Gradually add the dry ingredients to the zucchini mixture, stirring gently until just combined. Be careful not to overmix!
- If desired, fold in walnuts or chocolate chips for added flavor and texture.
- Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
Baking
- Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for about 10 minutes before transferring to a wire rack.
Notes
Store leftovers in an airtight container at room temperature for up to three days or freeze for up to three months. Reheat in a toaster oven or microwave before serving.
