Method
Grilling the Chicken
- Preheat the grill to medium-high heat.
- Season the chicken breasts with salt and pepper.
- Brush the chicken with honey BBQ sauce.
- Cook on the grill for 6-7 minutes per side, basting with additional BBQ sauce until cooked through.
Preparing the Potatoes
- Meanwhile, in a large bowl, toss the diced potatoes with olive oil, garlic, Parmesan cheese, salt, and pepper.
- Transfer the potatoes to a baking dish and bake at 400°F (200°C) for 25-30 minutes until golden and crispy.
Serving
- Serve the grilled chicken with the garlic Parmesan potatoes and garnish with fresh parsley.
Notes
Cool leftovers to room temperature, then store in airtight containers for up to 3–4 days. Freeze portions (without garnish) for up to 2 months. Reheat chicken in oven or skillet and re-crisp potatoes in the oven.
