Ingredients

For the Chicken
  • 4 boneless, skinless chicken breasts Can substitute with thighs for extra juiciness.
  • 2 cups breadcrumbs Panko works great for extra crunch.
  • Cooking oil for frying
For the Marinade
  • 1/2 cup honey
  • 4 cloves garlic, minced Feel free to add more if you love garlic.
  • 2 tablespoons soy sauce Tamari can be used for a gluten-free option.
  • 1 teaspoon ginger powder Fresh ginger adds a lovely touch too.
  • 1 teaspoon black pepper

Method

Preparation
  1. Pat the chicken breasts dry with a paper towel.
  2. In a medium bowl, mix together honey, minced garlic, soy sauce, ginger powder, black pepper, and a pinch of salt.
  3. Place the chicken breasts in a zip-top bag or shallow dish and pour the marinade over them. Let marinate for at least 15 minutes.
  4. Coat each marinated chicken breast thoroughly in breadcrumbs.
Cooking
  1. Heat about 1/4 inch of oil in a large skillet over medium-high heat.
  2. Carefully fry the coated chicken breasts for about 5-7 minutes on each side, until golden brown and cooked through.
  3. While the chicken is frying, bring the leftover marinade to a simmer in a small saucepan and reduce slightly until it thickens.
  4. Once cooked, remove the chicken from the skillet and glaze with the thickened honey garlic sauce before serving.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to three days. For reheating, use a preheated oven at 350°F for about 10-15 minutes.
