Preparation
  1. In a small bowl or jar, combine the lemon juice, honey, Dijon mustard, minced garlic (if using), and lemon zest.
  2. Season with salt and black pepper.
  3. Slowly stream in the olive oil while whisking briskly, or if using a jar, shake vigorously for about 20 seconds until emulsified.
  4. Taste and adjust the flavors by adding more honey, lemon, or salt.
  5. Let the dressing sit for 5 to 10 minutes for the flavors to meld.

Notes

For a creamier dressing, stir in 1 tablespoon Greek yogurt. For a vegan version, replace honey with maple syrup. Serve over salads or grilled dishes for an elevated meal.
