Ingredients
  

For the Chicken Marinade
  • 1 lb boneless, skinless chicken breasts
  • 2 tablespoons honey can substitute with maple syrup for a vegan option
  • 2 tablespoons lime juice freshly squeezed for the best flavor
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • Salt and pepper to taste
For the Bowl
  • 1 cup cooked brown rice can substitute with quinoa
  • 1 ripe avocado, diced
  • Handful fresh cilantro, chopped optional
  • Lime wedges for serving

Method
 

Preparation
  1. In a bowl, whisk together honey, lime juice, minced garlic, cumin, salt, and pepper. Add the chicken breasts, making sure they are well-coated in the marinade. Allow them to marinate for at least 10 minutes.
Cooking
  1. Heat a non-stick skillet over medium heat. Add the marinated chicken breasts and cook for about 6-7 minutes per side or until fully cooked and golden brown.
  2. Once cooked, remove the chicken from the skillet and let it rest for a few minutes.
Assembling the Bowl
  1. While the chicken is cooking, prepare your brown rice according to the package instructions.
  2. Slice the rested chicken into strips. In a bowl, add a generous scoop of the cooked rice, top it with sliced chicken, diced avocado, and a sprinkle of fresh cilantro.
Serving
  1. Squeeze additional lime juice over the top and serve with lime wedges on the side.

Notes

Leftovers can be stored in an airtight container for up to 3 days. Add avocado fresh before serving to maintain its texture. Adjust seasonings to taste.
