Preparation
- In a bowl, whisk together honey, lime juice, minced garlic, cumin, salt, and pepper. Add the chicken breasts, making sure they are well-coated in the marinade. Allow them to marinate for at least 10 minutes.
Cooking
- Heat a non-stick skillet over medium heat. Add the marinated chicken breasts and cook for about 6-7 minutes per side or until fully cooked and golden brown.
- Once cooked, remove the chicken from the skillet and let it rest for a few minutes.
Assembling the Bowl
- While the chicken is cooking, prepare your brown rice according to the package instructions.
- Slice the rested chicken into strips. In a bowl, add a generous scoop of the cooked rice, top it with sliced chicken, diced avocado, and a sprinkle of fresh cilantro.
Serving
- Squeeze additional lime juice over the top and serve with lime wedges on the side.
Notes
Leftovers can be stored in an airtight container for up to 3 days. Add avocado fresh before serving to maintain its texture. Adjust seasonings to taste.
