For the Chicken
  • 4 pieces boneless, skinless chicken breasts
  • 1/4 cup honey (for sweetness)
  • 1/4 cup lime juice (for that zesty kick)
  • 2 tablespoons olive oil (for moisture and flavor)
  • 2 cloves garlic, minced (for depth of flavor)
  • Salt and pepper to taste
For the Mango Salsa
  • 2 pieces ripe mangoes, diced (for tropical sweetness)
  • 1/2 piece red onion, finely chopped (for crunch)
  • 1 piece jalapeño, seeded and minced (for heat)
  • 1/4 cup fresh cilantro, chopped (for freshness)
  • 1 piece lime, juiced (to enhance flavors)
  • Salt and pepper to taste

Method
 

Preparation
  1. In a small bowl, whisk together honey, lime juice, olive oil, minced garlic, salt, and pepper.
  2. In a shallow dish, place the chicken breasts and pour the marinade over them.
  3. Let them marinate for at least 15 minutes, or up to 2 hours in the refrigerator for maximum flavor.
  4. While the chicken is marinating, mix diced mango, red onion, jalapeño, cilantro, lime juice, salt, and pepper in a medium bowl.
  5. Adjust seasoning to taste and set aside.
Cooking
  1. Heat a grill or skillet over medium-high heat.
  2. Remove the chicken from the marinade (discard any leftover marinade) and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F.
Serving
  1. Once cooked, let the chicken rest for a few minutes.
  2. Slice it and serve topped with the fresh mango salsa.

Notes

If mangoes aren't in season, you can use ripe peaches or papayas as a delightful substitute! Store leftovers in airtight containers for up to 3 days.
