Preparation
- In a small bowl, whisk together honey, lime juice, olive oil, minced garlic, salt, and pepper.
- In a shallow dish, place the chicken breasts and pour the marinade over them.
- Let them marinate for at least 15 minutes, or up to 2 hours in the refrigerator for maximum flavor.
- While the chicken is marinating, mix diced mango, red onion, jalapeño, cilantro, lime juice, salt, and pepper in a medium bowl.
- Adjust seasoning to taste and set aside.
Cooking
- Heat a grill or skillet over medium-high heat.
- Remove the chicken from the marinade (discard any leftover marinade) and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F.
Serving
- Once cooked, let the chicken rest for a few minutes.
- Slice it and serve topped with the fresh mango salsa.
Notes
If mangoes aren't in season, you can use ripe peaches or papayas as a delightful substitute! Store leftovers in airtight containers for up to 3 days.
