Ingredients
  

For the cookies
  • 1 cup unsalted butter, softened Use room temperature for even mixing.
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs Use room temperature for even mixing.
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips
  • 1 cup mini marshmallows Press lightly on top to preserve shape.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth.
  3. Beat in the eggs, one at a time, then stir in the vanilla.
  4. In another bowl, whisk together the flour, cocoa powder, baking soda, and salt. Gradually add to the butter mixture until well combined.
  5. Fold in the chocolate chips.
  6. Drop rounded tablespoons of dough onto the prepared baking sheets.
  7. Press a few mini marshmallows on top of each cookie.
  8. Bake for 10-12 minutes, until the cookies are set but still soft.
  9. Allow to cool on the baking sheets for a few minutes before transferring to wire racks to cool completely.

Notes

Store cookies in an airtight container. For best texture, consume within a few days and consider adding a slice of bread in the storage container to retain moisture.
