Preparation
- Bring apple cider to a boil in a saucepan and reduce by half. Let cool.
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in eggs one at a time, then stir in the cooled apple cider.
- In another bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet ingredients until just combined.
- Drop spoonfuls of dough onto the prepared baking sheet.
Baking
- Bake for 12-15 minutes or until lightly golden.
- Let cool completely.
Filling and Assembly
- For the filling, beat together cream cheese, powdered sugar, and vanilla until smooth.
- Spread or pipe filling onto the flat side of one cookie and sandwich with another.
