Ingredients
  

For the cookies
  • 1 cup apple cider Reduced to concentrate flavor
  • 1/2 cup unsalted butter, softened Use room temperature
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs Use room temperature
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
For the filling
  • 1 cup cream cheese, softened Use room temperature
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Bring apple cider to a boil in a saucepan and reduce by half. Let cool.
  2. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  3. In a bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  4. Beat in eggs one at a time, then stir in the cooled apple cider.
  5. In another bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  6. Gradually add the dry ingredients to the wet ingredients until just combined.
  7. Drop spoonfuls of dough onto the prepared baking sheet.
Baking
  1. Bake for 12-15 minutes or until lightly golden.
  2. Let cool completely.
Filling and Assembly
  1. For the filling, beat together cream cheese, powdered sugar, and vanilla until smooth.
  2. Spread or pipe filling onto the flat side of one cookie and sandwich with another.

Notes

Store in an airtight container in the refrigerator for up to 5 days. Leave at room temperature for 15-30 minutes before serving for best texture.
