Ingredients

Main Ingredients
  • 2 large ripe tomatoes, diced
  • 1 medium cucumber, peeled and diced
  • 1 ripe avocado, diced (for a creamy touch)
  • 1 small red onion, finely chopped (for a bit of zest)
  • 1 bunch fresh basil leaves, chopped (to enhance the flavor)
Dressing
  • 3 tablespoons extra virgin olive oil
  • 1 juice lemon (to brighten the dish)
  • Salt and pepper (to taste)

Method

Preparation
  1. Begin by dicing the tomatoes and cucumbers into bite-sized pieces, aiming for uniformity in size for even distribution and presentation.
  2. Carefully cut the avocado in half, remove the pit, and scoop out the flesh before dicing it. Take care not to mash the avocado; you want it to hold its shape.
  3. In a large mixing bowl, combine the diced tomatoes, cucumber, avocado, and red onion.
  4. Sprinkle in the fresh basil to add a lovely herbal note.
  5. In a separate small bowl, whisk together the olive oil, lemon juice, salt, and pepper until you achieve a smooth blend.
  6. Drizzle the dressing over the salad and gently toss to coat all the ingredients without bruising the avocado.
  7. Serve immediately, or let it sit for about 15 minutes to allow the flavors to meld.

Notes

Feel free to experiment with flavors! Consider adding a pinch of red pepper flakes for a hint of spice, or swap cucumber for zucchini for a different texture. Store leftovers in an airtight container for up to two days.
