Ingredients
  

For the Skewers
  • 1 lb Chicken breast, boneless and skinless Feel free to use thighs for a richer flavor.
  • 2 medium Fresh jalapeños Adjust quantity to your heat preference.
  • 2 medium Ripe peaches Can substitute with canned peaches if out of season.
  • 2 tbsp Olive oil Avocado oil can be used as an alternative.
  • 2 cloves Garlic, minced Fresh garlic enhances the aroma.
  • 2 tbsp Honey Maple syrup is a delightful alternative.
  • 2 tbsp Lime juice Brightens the flavors.
  • 1 tsp Salt To taste.
  • 1 tsp Pepper To taste.

Method
 

Preparation
  1. Cut the chicken breast into bite-sized cubes and place them in a large bowl.
  2. In a separate bowl, whisk together olive oil, minced garlic, honey, lime juice, salt, and pepper. Add sliced jalapeños and diced peaches.
  3. Pour the marinade over the chicken and toss to coat evenly. Let it marinate for at least 30 minutes.
  4. Preheat your grill to medium-high heat. If using wooden skewers, soak them in water for 30 minutes.
  5. Thread the marinated chicken, jalapeño slices, and peach chunks onto the skewers, alternating ingredients.
Cooking
  1. Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally until the chicken is cooked through and has nice grill marks.
  2. Remove from heat, let them rest for a few minutes, and enjoy the skewers hot.

Notes

For variations, substitute chicken with shrimp or tofu, and add vegetables like bell peppers or zucchini. Pair these skewers with a crunchy coleslaw or quinoa salad.
