Preparation
  1. Preheat the oven to 350°F (175°C). This ensures that your casserole cooks evenly.
  2. In a large skillet over medium heat, sauté the diced kielbasa until browned, about 5-7 minutes.
  3. In a large mixing bowl, combine the cooked kielbasa with diced potatoes, cheese, sour cream, cream of mushroom soup, and diced onion. Season with salt and pepper.
  4. Grease a 9×13 inch baking dish and evenly spread the mixture.
  5. Cover the dish with aluminum foil and bake for 30 minutes. Then remove the foil and bake for an additional 15 minutes until the top is bubbly and golden.
  6. Allow the casserole to cool slightly before serving.
