  • 8 oz Pasta Choose your favorite pasta shape; for a healthier option, use whole grain or legume-based pasta.
  • 1 cup Fresh Basil Chopped roughly for maximum flavor.
  • 1/4 cup Lemon Juice Freshly squeezed is ideal.
  • 2 tbsp Olive Oil Feel free to use infused oils for added flavor.
  • 1 cup Cherry Tomatoes Halved for sweetness and color.
  • 1/2 cup Parmesan Cheese Shaved or grated; can be omitted for a vegan version.
  • to taste Salt and Pepper Adjust according to preference.

Method
 

Preparation
  1. Boil a large pot of salted water. Once boiling, add the pasta and cook according to package instructions until al dente.
  2. While the pasta is cooking, prepare the dressing by combining freshly squeezed lemon juice, olive oil, salt, and pepper in a bowl.
  3. Once the pasta is done, drain it and rinse under cold water to halt the cooking process.
  4. In a large mixing bowl, combine the cooled pasta, chopped basil, halved cherry tomatoes, and desired amount of Parmesan cheese.
  5. Drizzle the lemon dressing over the salad, tossing gently to coat all the ingredients evenly.
  6. Taste and adjust seasoning if needed, then serve immediately or refrigerate for later to let the flavors meld.

Notes

Can be served as a standalone dish or alongside grilled meats or fish. Refrigerate leftovers for up to three days, adding extra lemon juice and olive oil when reheating. The flavors will deepen as it sits.
