  • 1/3 cup extra-virgin olive oil Use good quality for the best flavor.
  • 3 tablespoons freshly squeezed lemon juice About 1 large lemon.
  • 1 teaspoon lemon zest Optional, for extra brightness.
  • 1 teaspoon Dijon mustard Or grainy mustard if you like texture.
  • 1 teaspoon honey Or maple syrup; omit for vegan.
  • 1 small clove garlic Finely minced, or 1/4 teaspoon garlic powder.
  • 1/4 teaspoon fine sea salt Plus more to taste.
  • to taste freshly ground black pepper

Method
 

Preparation
  1. Gather your ingredients. The lemon should be firm and aromatic.
  2. In a small bowl, add the lemon juice, lemon zest, Dijon mustard, honey, minced garlic, salt, and pepper. Whisk until the mixture looks silky and the honey has dissolved.
  3. Slowly pour in the olive oil while whisking vigorously until the dressing emulsifies and thickens slightly.
  4. Taste and adjust the seasoning: add more salt, honey, or even a splash of olive oil as needed.
  5. If you prefer a smoother texture, blend briefly with an immersion blender or shake in a tightly sealed jar.
  6. Serve immediately, or refrigerate for up to a week. Let sit at room temperature before serving if chilled.

Notes

For variations, stir in fresh herbs, add crushed red pepper flakes for spice, or try a creamy version with tahini.
