  • 1 teaspoon Dijon mustard Helps emulsify and adds depth; use whole-grain mustard for texture.
  • 1 teaspoon honey or maple syrup Balances the acidity; omit for vegan option.
  • 1 small clove garlic, finely grated or minced Or substitute with 1/2 teaspoon garlic powder.
  • 1/4 teaspoon sea salt Plus more to taste.
  • 1/8 teaspoon freshly ground black pepper
  • 1 pinch red pepper flakes Optional, for warmth.
  • 2 tablespoons fresh herbs (parsley, chives, or basil) Optional, for added flavor.

Method
 

Preparation
  1. Zest and juice your lemon first so you capture every fragrant drop.
  2. In a small bowl or jar, combine the lemon juice, Dijon mustard, honey, grated garlic, salt, pepper, and red pepper flakes. Stir until well mixed.
  3. Slowly pour in the olive oil while whisking vigorously, or add all ingredients to a jar and shake hard for 20 seconds.
  4. Taste and adjust: add more salt, lemon juice, or honey if needed.
  5. Stir in chopped fresh herbs if using, and let the dressing sit for 5 to 10 minutes for flavors to meld.

Notes

This dressing is fantastic for salads, marinades, or drizzled over roasted vegetables. Store in an airtight jar for up to 7 days.
