Preparation
- Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan or line it with parchment paper for easy removal.
- In a large bowl, mix together the pumpkin puree, vegetable oil, sugar, and water until well combined.
- Add the eggs one at a time, mixing in completely after each addition.
- In a separate bowl, whisk together the flour, baking soda, baking powder, spices, and salt.
- Gradually add the dry ingredients to the pumpkin mixture, stirring until just combined. Do not overmix.
- If you’re using nuts, gently fold them into the batter at this point.
- Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
Baking
- Bake in the preheated oven for 60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Notes
To enhance flavors, consider adding a teaspoon of vanilla extract or experimenting with other spices like allspice or cardamom. Store bread in an airtight container at room temperature for up to 3 days, or wrap in plastic wrap and freeze for up to 3 months. Toast nuts in advance for better flavor.
