Preparation
  1. Preheat your oven to 425°F (220°C). Line two baking sheets with parchment paper or lightly grease them.
  2. Cut potatoes into 1/4- to 1/2-inch rounds. Uniform thickness ensures even cooking. Toss the slices in a bowl with olive oil, smoked paprika, garlic powder, onion powder, salt, and pepper until each slice is lightly coated.
  3. Lay the slices in a single layer on baking sheets, giving each a little room. For extra assurance they cook through, par-bake for 10 minutes, flip, then bake another 5–7 minutes until beginning to brown.
Topping and Baking
  1. Remove the sheets from the oven. Sprinkle each slice with chopped bacon (or vegetarian alternative) and a generous pinch of cheese.
  2. Return to the oven for 6–8 minutes or until cheese is melted and edges are crisp to your liking.
Finishing Touches
  1. Dollop small teaspoons of sour cream or Greek yogurt on each slice and scatter chives or green onions. Add a light dusting of smoked paprika or red pepper flakes for color and a mild spicy lift.
