Ingredients
  

For the skewers
  • 24 pieces frozen tater tots (thawed slightly) Any brand works; sweet potato tots can be used for a twist.
  • 8 slices bacon, cooked and chopped Swap with turkey bacon or smoked tempeh for a healthier option.
  • 1.5 cups shredded cheddar cheese Gruyere or pepper jack can add personality.
  • 3 pieces scallions, thinly sliced Substitute chives for a milder finish.
  • 12 pieces wooden skewers, soaked in water for 15 minutes Prevents burning.
  • 1/2 cup sour cream or Greek yogurt Greek yogurt is a thicker, tangy healthy option.
  • 1/4 cup pickled jalapenos, drained and chopped Optional for a bright heat.
  • 1 tablespoon smoked paprika Adds warmth and smokiness.
  • Salt and black pepper to taste

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment or foil.
  2. Arrange the tater tots in a single layer on the sheet and bake for 15 to 18 minutes, turning once, until they are golden and crisp.
  3. While the tots bake, cook the bacon until crispy in a skillet over medium heat, then chop into bite-sized pieces.
  4. Let the tots cool for 3 minutes, then thread two tots onto each skewer, sprinkle cheese and bacon in layers.
  5. Return the assembled skewers to the oven for 3 to 5 minutes until the cheese is melty and skewers are warm.
Serving
  1. Serve immediately with dollops of sour cream or Greek yogurt and pickled jalapenos on the side.

Notes

Soak wooden skewers to prevent burning. Offer toppings buffet-style for creativity. Use air-fried tots and Greek yogurt for a healthier option.
