Preparation
- Pat the chicken dry and season generously with salt, pepper, smoked paprika, and oregano. Let it rest while you heat the pan.
- Heat a large skillet over medium-high heat. Add the olive oil or butter.
- Add the minced garlic and let it sizzle for about 30 seconds until fragrant. Be careful not to burn it.
Cooking
- Add the chicken strips in a single layer. Allow them to sear undisturbed for 2–3 minutes, then stir and cook another 4–6 minutes until cooked through.
- Reduce heat to low and sprinkle the shredded cheese over the chicken. Cover the pan for 1–2 minutes to let the cheese melt.
Assembly
- Warm the low carb tortillas briefly in a dry skillet or microwave for 10 seconds.
- Assemble the wraps by placing spinach or arugula on each tortilla, spoon the cheesy garlic chicken on top, add cherry tomatoes if using, and finish with Greek yogurt and lemon.
- Roll snugly and serve immediately.
Notes
For a dairy-free version, use dairy-free cheese and swap butter for olive oil. Marinate the chicken 30 minutes in lemon, garlic, and a touch of olive oil for extra flavor.
