Method
 

Preparation
  1. Pat the chicken dry and season generously with salt, pepper, smoked paprika, and oregano. Let it rest while you heat the pan.
  2. Heat a large skillet over medium-high heat. Add the olive oil or butter.
  3. Add the minced garlic and let it sizzle for about 30 seconds until fragrant. Be careful not to burn it.
Cooking
  1. Add the chicken strips in a single layer. Allow them to sear undisturbed for 2–3 minutes, then stir and cook another 4–6 minutes until cooked through.
  2. Reduce heat to low and sprinkle the shredded cheese over the chicken. Cover the pan for 1–2 minutes to let the cheese melt.
Assembly
  1. Warm the low carb tortillas briefly in a dry skillet or microwave for 10 seconds.
  2. Assemble the wraps by placing spinach or arugula on each tortilla, spoon the cheesy garlic chicken on top, add cherry tomatoes if using, and finish with Greek yogurt and lemon.
  3. Roll snugly and serve immediately.

Notes

For a dairy-free version, use dairy-free cheese and swap butter for olive oil. Marinate the chicken 30 minutes in lemon, garlic, and a touch of olive oil for extra flavor.
