Ingredients
  

Meatloaf Base
  • 1 lb ground beef Use lean ground beef for less grease.
  • 1/2 cup diced onion Can substitute with shallots for a milder flavor.
  • 1/2 cup breadcrumbs Use seasoned breadcrumbs for added flavor.
  • 1 large egg Acts as a binder for the meatloaf.
  • 1/4 cup milk (for meatloaf)
  • 1 tsp salt Adjust to taste.
  • 1/2 tsp pepper Black pepper preferred.
Mac and Cheese Layer
  • 2 cups uncooked macaroni Cook according to package directions.
  • 2 cups shredded cheddar cheese Sharp cheddar recommended for flavor.
  • 2 tbsp butter (for cheese sauce) Use unsalted butter.
  • 2 cups milk (for cheese sauce)
  • 2 tbsp flour To thicken the cheese sauce.
  • 1/2 tsp paprika Can use smoked paprika for a different flavor.
  • 1/2 tsp dry mustard Adds depth to the cheese sauce.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine ground beef, onion, breadcrumbs, egg, milk, salt, and pepper. Mix well and press into a greased baking dish.
Baking Meatloaf
  1. Bake the meatloaf for 20 minutes.
  2. While it bakes, cook macaroni according to package directions; drain and set aside.
Making Cheese Sauce
  1. For the cheese sauce, melt butter in a saucepan over medium heat. Stir in flour and cook for one minute.
  2. Gradually whisk in milk until thickened; season with salt, pepper, paprika, and dry mustard.
  3. Stir in shredded cheese until melted.
Combining Layers
  1. Combine cooked macaroni with the cheese sauce and pour over the meatloaf layer.
  2. Top with remaining cheese.
Final Baking
  1. Bake for an additional 25 minutes or until bubbly.

Notes

Let the casserole rest for 5–10 minutes after baking for clean slices. Serve with a green salad or steamed vegetables.
