- Cook the Pasta: Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Reserve ½ cup of pasta water before draining.
- Sauté the Chicken: In a large skillet over medium heat, add a splash of olive oil. Season the chicken breasts with salt and pepper, then cook for about 5-6 minutes on each side, or until golden brown and cooked through. Remove from the skillet and let rest.
- Prepare the Sauce: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Pour in the chicken broth, scraping up any brown bits. Stir in the heavy cream and Italian seasoning, bringing the mixture to a simmer.
- Combine and Toss: Slice the cooked chicken and return it to the skillet. Add the drained pasta, tossing everything together. If the sauce is too thick, add a bit of the reserved pasta water until you reach your desired consistency.
- Serve and Garnish: Spoon the creamy pasta onto plates, garnishing with fresh parsley for that extra pop of color.
Notes
Feel free to add spinach for a nutritious boost, or swap chicken for shrimp. You could also sprinkle in some red pepper flakes for a little heat or incorporate sun-dried tomatoes for a Mediterranean flair. Leftovers can be stored in an airtight container in the refrigerator for up to three days. To reheat, warm gently in a skillet over medium heat, adding a splash of cream or broth.
