Ingredients
  

For the Meatloaf
  • 1 pound ground beef (or turkey for a lighter option)
  • 1 cup breadcrumbs Feel free to use gluten-free if necessary
  • 1/2 cup milk
  • 1/4 cup finely chopped onion
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup shredded cheddar cheese For that glorious cheesy interior
  • 1 unit egg
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon pepper
For the Mashed Potatoes
  • 2 pounds potatoes For the mashed potatoes
  • 1/2 cup butter You can replace this with olive oil for a healthier touch
  • 1/2 cup sour cream Or Greek yogurt for extra creaminess

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the ground beef, breadcrumbs, milk, onion, Parmesan cheese, egg, garlic powder, salt, and pepper. Mix until just combined.
  3. Form the meat mixture into a loaf shape and place it in a greased baking dish or on a lined baking sheet.
Baking
  1. Bake in the preheated oven for 45 minutes.
  2. While the meatloaf is cooking, peel and chop your potatoes into even pieces.
  3. Boil the potatoes in salted water until tender, about 15 minutes. Drain and let them sit for a minute or two.
  4. In a mixing bowl, mash the potatoes with butter, sour cream, and additional salt to taste.
  5. Once the meatloaf has reached an internal temperature of 160°F (70°C) and is browned on top, remove it from the oven and let it rest for 10 minutes before slicing.
Serving
  1. Serve your slices of meatloaf on a mound of mashed potatoes, topping with a sprinkle of additional cheese if desired.

Notes

Store leftovers in airtight containers in the fridge for up to three days. Reheat in the oven at 350°F (175°C) or in the microwave, adding a splash of broth for moisture.
