Ingredients
  

For the Meatballs and Potatoes
  • 1 pound ground beef
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 each egg
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • to taste Salt and pepper
  • 2 cups diced potatoes
  • 2 tablespoons olive oil
For the Salad
  • 1 head romaine lettuce, chopped
  • 1 each cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 each red onion, thinly sliced
  • Feta cheese, for topping
  • Olive oil and lemon juice for dressing

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine ground beef, breadcrumbs, Parmesan, egg, garlic, oregano, salt, and pepper. Mix until well combined.
  3. Shape the mixture into meatballs and place them on a baking sheet.
  4. Toss the diced potatoes with olive oil, salt, and pepper, and spread them out on a separate baking sheet.
Baking
  1. Bake the meatballs and potatoes for 25-30 minutes, or until the meatballs are cooked through and potatoes are golden.
Assembly
  1. In a bowl, combine lettuce, cucumber, tomatoes, and red onion for the salad.
  2. Top with feta cheese and drizzle with olive oil and lemon juice.
  3. Serve the meatballs and roasted potatoes over the salad.

Notes

Store components separately to maintain freshness. Serve with warm pita or crusty bread if desired. For added flavor, consider fresh herbs in the salad.
