  • 1 piece onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes Or use fresh ones for an even brighter flavor.
Seasonings
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • to taste Salt and pepper
  • for drizzling Olive oil

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine diced chicken, zucchini slices, onion, minced garlic, and canned tomatoes. Mix well to ensure the flavors meld together.
  3. Season the mixture with oregano, basil, salt, and pepper. Drizzle with olive oil to encourage browning.
  4. Transfer the mixture into a greased baking dish, spreading it evenly.
  5. If using cheese, sprinkle it generously over the top for a deliciously gooey finish.
  6. Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes.
  7. After 20 minutes, remove the foil and bake for an additional 10-15 minutes, or until the chicken is cooked through and the tops are golden brown.
  8. Allow the dish to cool slightly before serving and garnish with fresh herbs.

Notes

This dish can be made ahead and stored in the refrigerator for up to three days. To reheat, pop it in the oven or microwave until warmed through. For an extra touch, consider pairing it with a refreshing side salad or some crusty bread.
