  • 2 cans salmon, drained and flaked
  • 1 cup fresh spinach, chopped
  • 1/4 cup crumbled feta cheese
  • 1/2 cup breadcrumbs
  • 1 large egg, beaten

Method
 

Preparation
  1. In a large bowl, combine the salmon, chopped spinach, crumbled feta, breadcrumbs, and beaten egg.
  2. Mix until well combined.
  3. Form the mixture into patties.
Cooking
  1. In a skillet over medium heat, add a little oil and cook the patties for about 4-5 minutes on each side or until golden brown.
Serving
  1. Serve warm with a side salad or your choice of sauce.

Notes

These patties can be served hot or warm. Serve them with a fresh side salad dressed in a light vinaigrette, yogurt-based tzatziki sauce, or lemon juice. They can also be placed in a pita pocket with lettuce and tomatoes for a filling meal.
