- In a large bowl, combine the salmon, chopped spinach, crumbled feta, breadcrumbs, and beaten egg.
- Mix until well combined.
- Form the mixture into patties.
Cooking
- In a skillet over medium heat, add a little oil and cook the patties for about 4-5 minutes on each side or until golden brown.
Serving
- Serve warm with a side salad or your choice of sauce.
Notes
These patties can be served hot or warm. Serve them with a fresh side salad dressed in a light vinaigrette, yogurt-based tzatziki sauce, or lemon juice. They can also be placed in a pita pocket with lettuce and tomatoes for a filling meal.
